Led by Gelato Technical Manager Jonny Ireland, this is a in-depth look at building a base recipe by hand.
The course contents are as follows…
- Ingredients for gelato/ice cream- What to use and the basic science behind them
- Method for balancing gelato/ice cream
Attendee’s will receive a written method to build a recipe with a recipe building table, as well as a full copy of the presentation and at least 2 recipes. Attendees will also leave with a certificate upon completion.
Please note this course is for commercially made gelato/ice cream and not for home use.
